Bone Broth and Roasted Garlic Mashed Potatoes
• Ingredients:
• 300 ml bone broth
• 500 g potatoes, peeled and chopped
• 1 whole head of garlic
• 2 tbsp butter
• Salt and pepper to taste
• Fresh chives or parsley, chopped (for garnish)
• Instructions:
1. Preheat oven to 180°C. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 25–30 minutes until soft.
2. Boil potatoes in salted water until tender, then drain.
3. Squeeze roasted garlic into the pot, add butter, and mash together.
4. Gradually add bone broth for a creamy texture, season with salt and pepper, and garnish with fresh herbs.
